Day 1 Thoughts

Well day one of my three month diet is in the books and it went much better than I had anticipated! Mostly because I have a great group of friends that values a well cooked, healthy, meal. Breakfast started with a three egg-white omelet with sauted onions and tomatoes. For lunch, Nick made some lettuce wraps using ground turkey, hoisin sauce, and asian vegetables. The lettuce wrap recipe will definitely be a regular meal during my diet. Delicious! And for dinner, my beautiful fiance marinated some chicken in soy sauce and lime juice. If I can eat this well for the rest of my diet, I'll have no problem hitting my target wait in April. Wish me luck!
